Happy Hour @ 1102

Well Spring has officially arrived.  If it doesn’t feel like it in your neck of the woods.  Have this 1102 Happy Hour cocktail and start to think of Spring.  So for the next few weeks I will try to feature some cocktails that will lighten your spirits and warm the cockals of your soul.  Enjoy!

Kiwi Colada

5 peeled kiwifruit, divided
3 cups ice
1/4 cup light rum
1/4 cup Midori (melon-flavored liqueur)
3 tablespoons Cream of Coconut (such as Coco Lopez)
1 (8-ounce) can crushed pineapple in juice, undrained

Happy Hour @ 1102 – Vanilla Dark & Stormy

Now you didn’t think I was going to let that Ginger Beer go to waste.  But I’m probably finishing it off this week.  From here on out nothing but holiday flavors at Happy Hour.  But til then – enjoy this cocktail.


Combine 2 cups dark rum with 3 cups ginger beer (not ginger ale), the juice of 4 limes and a tiny splash of vanilla extract in a pitcher. Serve on the rocks with lime wedges.

1-1/2 shots Dark Rum

1/2 shot Cinnamon-Clove Simple Syrup

Dash Angostura Bitters

1/2 cup Ginger Beer


We continue to work into the Fall theme, this week we a taste of cinammon.  If you liked the Moscow Mule from last week, this is a variation, a little sweeter and the distinct taste of cinnamon.  If you don’t have, Cinnamon Simple Syrup, you can use powdered cinnamon.  It’s harder to disolve, so make sure you stir it well.  Use a Cinnamon Stick as a garnish and stirrer.  Enjoy!

Happy Hour @ 1102 – Pineapple Ginger Mojito

Pineapple Ginger Mojito


1 1/2 shots of Pineapple Rum

6-8 Mint leaves                                                                                          

Pineapple Chucks

Juice of 1 small Lime                                                                              

1 shot Ginger Simple Syrup

Splash Soda Water

Garnish  —   Pineapple Spear   –   Mint Sprig   –   Lime

Muddle mint, lime juice an a pineapple chuck with simple syrup in a 14 oz glass. 

Fill glass with crushed iced.  Stir drink to incorporate the flavors and coat the ice. 

Then refill the glass with more crushed ice.  Pour the rum, add the splash of Soda water.  Stir Once.

Garnish with either a Pineapple Spear or a Mint Spring & Lime Wheel


Ginger Simple Syrup – Boil 1 cup water,  add 1 cup sugar, add ginger root, peeled and sliced to pot.  Let cool – Strain simple syrup into bottle, refrigerate.

You can make your own pineapple rum, by filling empty bottle with pineapple, cover with rum.  Let sit overnite.

Pineapple Mojitos

We have a couple more weekends of summer, and here is a refreshing cocktail to perk up your outdoor time and labor day cookouts.

6 mint leaves

4 Big Pineapple Chunks

2 teaspoons Brown Sugar

2 ozs Dark Rum

1 dash Pineapple juice

Crush the Mint, Pineapple and Brown Sugar in the bottom of a shaker.

Add Rum and Shake with Ice

Fill a Highball Glass with ice

Strain Cocktail over the ice and garnish with a mint spring and pineapple chunk

Classic Mojito

 Cuba is the birthplace of the Mojito. Traditionally a Mojito is made with 5 ingredients:  White Rum, Sugar, Lime Juice, Mint, and Sparkling Water.  Its combination of sweetness, refreshing citrus and mint flavors are intended to complement the potent kick of the rum, and have made this clear highball a popular summer drink.
