Happy Hour @ 1102

 This Blue Margarita should remind you of cool water and summer beaches.  Tequila should remind you of vacations and wild parties.  Enjoy your Friday evening with this light drink.

 Tropical Blue Margarita

1 1/2 oz  Tequila
1 o zBlue Curacao liqueur
1 oz lime juice
coarse salt
Rub rim of cocktail glass with lime juice. Dip rim in coarse salt. Shake tequila, blue curacao, and lime juice with ice, strain into the salt-rimmed glass, and serve.

Soup’s on @ 1102

Last Soup:  Broccoli and Bread Soup

My Rating:  **   2 out of 5 stars

Comments:  I found this soup to be extremely bland.  It was not to my liking.  I would have done better to have made it a broccoli cheddar soup.  The salt from the cheese would have given it some added flavor.  The best part was the bread.  But if a mild soup is to your liking this will do just fine.

Well, with the weather warming up  – Here in Arizona it’s been warmer for a while now – My desire for soup has diminished.  So, I gave this review of our last soup featured, and I will have to turn Wednesday toward a lighter food fare.  As of now I haven’t decided just what. . . Maybe Salads,  maybe low cal . . .  I will have to see what catches my palette.  “Soup’s On” will return in the fall, when I’m looking for warmer tastes and comfort food.

Happy Hour @ 1102

Well Spring has officially arrived.  If it doesn’t feel like it in your neck of the woods.  Have this 1102 Happy Hour cocktail and start to think of Spring.  So for the next few weeks I will try to feature some cocktails that will lighten your spirits and warm the cockals of your soul.  Enjoy!

Kiwi Colada

5 peeled kiwifruit, divided
3 cups ice
1/4 cup light rum
1/4 cup Midori (melon-flavored liqueur)
3 tablespoons Cream of Coconut (such as Coco Lopez)
1 (8-ounce) can crushed pineapple in juice, undrained

Red Snapper

Ingredients

  • 1 1/4 fluid ounces whiskey
  • 1 fluid ounce amaretto liqueur
  • 1 fluid ounce cranberry juice
  • 1 cup ice cubes

Directions

  1. Place the whiskey, amaretto, and cranberry juice into a shaker with ice. Shake, then strain into shot glasses.
